A quick sauce of fresh orange, red chile, scallions and herbs is delicious spooned over any grilled protein. Bonus: It doubles as a marinade!

Yields: 1 cup

small orange

1 tsp.

grated lime zest plus 1 Tbsp lime juice

2 tbsp.

olive oil

1/2

large red chile, seeded and finely chopped

1

scallion, finely chopped

1/2 c.

cilantro, chopped

1/4 c.

parsley, chopped

  1. Using a vegetable peeler, remove 2 large strips zest from orange. Finely chop zest and place in a bowl. Squeeze in 2 tablespoons orange juice.
  2. Add lime zest and juice along with oil, chile, scallion and herbs and mix to combine. Serve with your favorite proteins or veggies.
